未・低利用水産生物や水産副産物から有用生化学成分を探索し、それらを食品や生物化学資源などに利活用するための技術開発に関する研究 (1) ホタテおよびイカ内臓に含まれるPUFA含有脂質の濃縮法の開発 (2) 魚類内臓からペプシンの分離精製とそれを用いたマリン・コラーゲンの調製 (3) イカ内臓由来トリプシン・インヒビターの血糖低下作用とその機構解明 (4) 北方系未利用紅藻ダルスから有用成分の分離精製とそれらの機能特性の解明

水産物の製造・加工時の廃棄物や低次利用・未利用の水産物には、種々の有用生化学成分が含まれています。そこで、それらの有用成分の諸特性(資源量、分布、化学構造、物性、生理活性)を明らかにし、有効活用するためのプロセス(抽出、分離、精製、濃縮、機能改変)を開発することで、ゼロエミッション型の水産物利用を目指しています。
